Kharvas is a traditional Maharashtrian dessert made of colostrum milk. It has been a regular delicacy in rural households having cattle at home. Can be prepared from lactating cow or buffalos’ milk by steaming the milk with jaggery and cutting into scrumptious cakes.
A nicely made kharvas is extremely soft with a minimal chewiness. In Pune you can find many such outlets offering Kharvas. Girija, off Karve Road serves a very good Kharvas. It’s very delicate and luscious. Presented in transparent bowl with some saffron added above gives it a nice look. But honestly I think, Kharvas, because of its inherent texture can be cut into much better shapes and be made much more presentable.
