Kharvas is a traditional Maharashtrian dessert made of colostrum milk. It has been a regular delicacy in rural households having cattle at home. Can be prepared from lactating cow or buffalos’ milk by steaming the milk with jaggery and cutting into scrumptious cakes.

A nicely made kharvas is extremely soft with a minimal chewiness. In Pune you can find many such outlets offering Kharvas. Girija, off Karve Road serves a very good Kharvas. It’s very delicate and luscious. Presented in transparent bowl with some saffron added above gives it a nice look. But honestly I think, Kharvas, because of its inherent texture can be cut into much better shapes and be made much more presentable.

This homely milk pudding deserves much more glory than it has today. It can be a great dessert option in restaurants. Well all said, who will bell the cat? Maybe us by sharing more about it…
