The insane popularity of Biryani, Haleem, Patthar ka Gosht etc indeed reflect the importance of meat in Hyderabadi cuisine and living in general. Apart from meat, baking and baked products is another quintessential part of Hyderabadi living. This can be easily reflected from the sheer number of Cafes in Hyderabad and the piles of baked goodies on the display. Be it Osmania Biscuits available in every nook and corner or the more premium Fruit biscuits from Karachi Bakery. Amidst all these legendary cookies and their patrons, one cookie has never received the limelight it deserves. It’s called Dum ke Roat. And Subhan Bakery is the name inseparably tied to it in Hyderabad from decades. But one needs to be really lucky to get hands on it.

They serve these special cookies, Dum ke Roat exclusively during month of muharram.

So expect long queues in peak hours. Though it’s worth it.

This hugely saught-after confection – Dum ke Roat – is made from semolina, milk and loads of ghee. It is baked to perfection, with poppy seeds and a whole almond on the top of it. Moreover the reasonable amount sugar gives it a balanced taste. Such abundance of  rich ingredients truly epitomizes the king size eating habits of this princely state.

So if you are fortunate enough to be in Hyderabad, during the month of Muharram, a visit to Subhab Bakery is worthwhile. To grab a slice of baked goodness.
